Why are these kernels so pale?+
Colour tracks freshness and variety. Kagzi walnuts shelled soon after harvest give pale 'snow-white' halves; kernels that sit shelled in storage darken and turn bitter. Ours are cracked to order.
How many walnuts a day?+
A common portion is 28g — roughly 6–7 halves — daily. Soaking overnight softens the tannins further if you find raw walnuts sharp.
